Banana and Blueberry Cake

This delicious banana and blueberry cake is made with almond flour so is more keto friendly than using normal flour. You can make your own variations by adding blueberries or seeds.

Ingredients:

2 or 3 ripe bananas.
76g of melted butter.
1/2 teaspoon of sea salt.
1 teaspoon of baking powder and baking soda.
2 tablespoons of liquid honey.
2 large beaten eggs.
1 teaspoon of vanilla extract.
1 teaspoon of cinnamon powder.
1 teaspoon of ginger powder.
200g almond flour.
Optional: 250g of blueberries. Chia seeds.

 Method:

First of all pre-heat your oven to 180 deg. C.

Mash the bananas in a bowel until smooth.
Stir in the butter (or olive oil).
Mix in the remaining ingredients, the baking soda and powder, salt, honey, eggs and vanilla extract.
Mix in the flour to form the dough. It should not be too runny or stiff. If runny add more almond flour and if dry add some coconut milk.
Add the blueberries.
Sprinkle some chia seeds on the top.

Put in an oven proof dish with parchment so that its easy to extract without sticking when cooked. 

Place in the oven 180 deg C for 60 minutes but do check along the way.

Remove and leave to cool, take it out of the dish and allow to further cool on a wire rack.

Make sure it is completely cool before attempting to slice it otherwise it will break up. Goes well with some butter and honey.
