I start by boiling the potatoes briefly, then give them a shake to rough up the edges. Here's the twist: I add a little turmeric — not just for the health benefits, but to help boost that deep golden colour.
Then it’s into the oven with goose fat (my favourite — unbeatable for crispiness), though olive oil works too if you prefer.

· Potatoes (Maris Piper or King Edward work well)
· Turmeric
· Goose fat or olive oil
· Salt & pepper
· Optional: rosemary or garlic for added aroma
Roast at 200°C for around 50 minutes, basting and checking regularly. This isn’t a lazy traybake — but if you want proper roast potatoes, this is the way.
