Chickpeas & Avocado Salad - No Lettuce!

 

No lettuce? No problem.

This easy salad is packed with flavour, colour, and texture — all without a single leaf in sight. In this quick recipe, I toss together:

🥑 2 ripe avocados (sliced)
🧅1 red onion (thinly sliced)
🟡 1 jar or can of cooked chickpeas (drained)
🍅 A handful of cherry tomatoes (halved or quartered)
🍋 Lemon juice + olive oil dressing

Mix the dressing first, then toss everything together gently. It’s done in under 20 minutes — fresh, filling, and totally lettuce-free.
