Crispy chicken thighs


This is another favourite which has shown a lot on interest in our YouTube video presentation. This menu is for 1 - 2 people and will take around 25 minutes to prepare and cook. There is a link to our video on YouTube at the end of this article.

                                                               Crispy chicken thighs.

Ingredients

4 Chicken thighs (bone in and with skin still on).
Goes well with spinach or asparagus.

Directions

Dry the chicken with a paper towel and pat the skin thoroughly dry.

Heat up the skillet or frying pan on a medium to high heat. But before you add the chicken let it get really hot. It may set off your smoke or fire alarm so watch out and open a window.

Add a little ground nut oil and wait till it gets hot and shimmers. Add the chicken thighs skin down and let them sear for about ten minutes with a cover on. Avoid the temptation to look at them.

Flip them over and cook the other side, the skin should really be crispy now. Put them on a shallow baking tray and put in the oven for 15 - 20 minutes at a temperature of 200 deg. C.

Check that they are thoroughly cooked, remove and plate up. These chicken thighs go well with some steamed spinach or asparagus softened in butter and garlic puree.

Note: Fry skin down for specified period try not to look at the skin before the time has elapsed!
