Salmon is one of the most nutritious foods on the planet. This fatty fish contains many nutrients and may reduce risk factors for several diseases and is widely available. Apart from being a great source of protein, it is rich in Omega 3 fatty acids, high in B vitamins and a good source of potassium and selenium.
Honey and soy glazed salmon with peppers is one of the Crazy Chef's favourite meals. This recipe is for one person and take around 40 minutes to complete which includes 10 minutes of prep. time. There is a link to our YouTube video on how to cook this at the end of this article.
Honey and soy glazed salmon with peppers, onions and rice.
Ingredients
One Salmon filet preferably with the skin (about 200g)One red and one white onion.
one large red bell pepper.
Sea salt and ground black pepper.
Olive 'wok' oil flavoured with sesame, garlic and ginger.
Set or clear honey.
Fresh ginger root and Basil for garnish (optional).
Directions
Prepare the rice with water and a chicken stock cube and cook slowly.Slice up the onions and pepper, spread out on a shallow baking tray and drizzel over the olive oil. Add the garlic and ginger (this can be prepared in a frying pan if it is easier). Add a drizzle of soy sauce and a pinch of sea salt. Place in a pre-heated oven at 220° C for about 20 minutes or until nearly soft.
In a heated frying pan or skillet place about a tablespoon of soy sauce, two teaspoons of honey, freshly grated ginger and a pinch of sea salt. When hot add the salmon and baste for around 20 minutes or until nearly cooked. Flip over once or twice and try and make the skin crisp.
Remove the tray from the oven and place the salmon on top of the onions and pepper. Pour in the residue juices from the frying pan and continue to bake for about another 10 minutes, checking to see when it is cooked to your liking.
Transfer to a serving plate with the Salmon over the vegetables. Add the rice and use Basil leaves as a garnish if desired.
